I am so happy I woke up extra early today to put everything in the crockpot. The weather is pretty bad today but we both still had to go into work and the daycare was open. Tonight on the menu is chicken tacos, corn and refried beans! It is easy, quick and yummy! We usually have a good amount of left overs to save for lunches the rest of the week for either taco salad or wraps. Ingredients:
3-5 chicken breasts (can be frozen but doesn't have to be),
1 packet of taco seasoning (we use low sodium), 1 medium jar of salsa, 1 block of cream cheese (note- optional), wraps, shredded cheese, onions, lettuce, tomato or anything else you would use to make tacos.
Place your chicken breasts in the crockpot, sprinkle seasoning on top and then dump the jar of salsa on top. Cook on low for 6-10 hours depending on if the chicken was frozen and the type of crockpot. You don't need to add water because of the water content in the salsa. You also could add black beans or another ingredient to mix it up. If you want cream cheese with the chicken taco meat, about 1/2 hour before serving, place cream cheese in crockpot, turn to high and cook for 30 mins. Pull chicken apart and stir. Serve with taco fixings of choice, refried beans, and wraps or shells.
This should help us out since we will probably be getting home from work later than usual and will have less time to do our usual routine. We only have about two hours with Nick until it is bedtime for him, so we have to make those hours count and spend our time with him.
